Super Simple Summer Recipes

 

I’m not someone who cooks all of the time ….. Call me lazy, call me spoiled, or just hand me the phone and let me call for delivery is more like it!  But that said, I do have a few great Summer recipes up my sleeve.  This past weekend I spent some time with my parents and grandfather in Florida and had a chance to make a few of my favorite simple Summer dishes.

WATERMELON SALAD

This salad is so simple yet sophisticated.  It’s sure to be a hit with guests and its super easy to take with you as a side.

Ingredients:

  • Watermelon
  • Mint
  • Feta Cheese

Directions:

  • Cut the watermelon into chunks
  • Chiffonade the mint (i.e., slice it thinly)
  • Sprinkle the mint and feta over the water melon and toss

ZUCCHINI FRITTA

 

Ingredients:

  • 1 zucchini, spiralized preferred (if not, grate and then use paper towels to press out the excess water)
  • 3/4 cup cheddar cheese
  • 6 eggs
  • 1/4 cup heavy whipping cream
  • Garlic, salt and pepper to taste
  • Fresh herbs
  • Nutmet

Directions:

  • Pre-heat oven to 350 degrees
  • Sautee zuchinni, garlic salt and pepper in a skillet and set aside
  • Mix eggs and heavy whipping cream in a bowl, whip
  • Add cheese, herbs and sauteed zuchinni to the bowl and mix ingredients well
  • Pour mixture back into skillet and sprinkle with nutment; put in oven for 15 minutes
  • You want your fritta to be nice and fluffy, test with a fork to make sure egg has cooked all the way through
